Fox Hollow Farm is located in Shandaken, Ulster County, NY. We are in the northwestern Catskill Mountains, not far from Delaware County. While neighboring Delaware County is reknowned for its resurgence of quality, small-scale sustainable agriculture, the Catskill Mountains pose inherent challenges for farming....forest, steep slopes, springs and rocky soils. Sounds like farming fun!
So what are we farming? Our "farm" is more like an adventure in homesteading -- we are striving to be self-sufficient and at the same time, create value and products using the natural bounty of our lands. Maple trees, wild herbs & flowers, foraged foods (mmmm...wild blackberries!) and a big, big garden is our focus right now. We have a few ducks that joined us in 2012 and no longer want chickens. We hope to expand to include goats, orchard crops and more....follow us on our low-budget adventures in family farming!
